Adventures in Quinoa

I think I've had quinoa twice in my life-and both times were pre-college (at least 4 years ago). Still, it is often cited as a great grain to cook with, and when I found this recipe, I had to try it. 

Quinoa Cakes:

2 ½ cups COOKED quinoa
2 large eggs
½ tsp sea salt
1/3 cup cheese
½ tsp garlic powder
1 tablespoon EVOO
Cayenne Pepper

Cook quinoa. Mix together quinoa, eggs, cheese, garlic, pepper and salt in a medium bowl. Form the mixture into 12 patties. Heat oil on medium-low, with 4-6 patties in the pan. Cook for 7 minutes, until browned, then flip and allow to cool. Repeat with rest. Serve with pesto, marinara, drizzled with oil.

When I made this, I accidentally *started* with 2.5 cups of quinoa...which cooks up to a large amount of quinoa. Luckily, this recipe and quinoa tastes great. I was able to mix half of it (loose) with onion, tomato, more cayenne pepper and garlic powder and it got rave reviews. The other half of it I kept plain to be used as a side dish when I make a burger or other protein (...maybe tempeh next?). Overall, this recipe was super easy and I can see the patties being a great way to eat healthier on the go!
